Food Picks: Lovely corn job

There aren't many places that serve cornbread, let alone sell loaves of it. In fact, I can think of only one restaurant here that serves corn bread to diners - Luke's Oyster Bar & Chop House at Gemmill Lane.

So I was pleasantly surprised to learn about the Maize Bread ($26 a loaf) at Skinny Pizza and 40 Hands ($26 a loaf and $3 a slice). This bread, which includes kernels of sweet corn, is more like a cake than a sourdough or multi-grain loaf. It has a texture similar to that of banana bread.

Cut a thick slice, toast it, then spread it with cold butter and let the butter melt into the bread.

I like to spread mine with cold butter and Vegemite, then cover it with slices of avocado, seasoned with salt and pepper.

The salty Vegemite complements the sweetness of the corn bread, while the avocado just gives it another textural dimension. Plus, it also turns a slice of corn bread into a wholesome meal. The bread also goes well with melted cheese.
