Chinese-style oyster omelette (or luak) takes the humble omelette into a different sphere – the traditional version is a mix of eggs and sweet potato flour to give the omelette a slightly glutinous texture, lifted with the brininess of local oysters (not really oysters per se but a similar small shellfish) and a tangy chilli sauce accompaniment.
New generation hawkers have amended the original recipe somewhat, such that you can find myriad versions ranging from oyster omelette without the omelette, or without the oysters.
