Dark wood, custom graffiti-like artwork and glass enclosures. This sexy tapas lounge at Marina Bay Sands is the brainchild of three-Michelin-star chef Santi Santamaria.
It comes three months after his eponymous fine-dining restaurant opened in May.
The tapas lounge’s alluring decor is a mirror of his centuries-old, award-winning restaurant, Can Fabes, in his Spanish hometown of Sant Celoni.
“It’s perfect for those who prefer a lighter menu in a more casual and informal setting,” said Santamaria, who is the first Catalan chef to receive three Michelin stars from the respected food guidebook.
Signature dishes include gazpacho, which is a tomato-based soup with olive oil and fresh almonds.
There is also the octopus salad with sofrito sauce, which is a base of garlic, onion and tomatoes cooked in olive oil.
Another dish is quail escabeche, which is served with marinated eggplant.
Diners can choose between $60++ and $90++ tapas set dinners.
